A Bangkok-trained chef's Northern Thai kitchen — hidden inside a Calgary craft distillery. Not takeout. A destination.
Sawanya Sousa grew up in northern Thailand at the side of her mother and grandmother — both respected cooks in their school community. She was already learning at the stove by the age of seven.
She trained at a culinary school in Bangkok, then, in 2020, began cooking Northern Thai food out of her own home kitchen for Calgary's Thai community. Word spread fast. A first restaurant opened in 2022 — and was outgrown in months.
A ten-day pop-up inside Starr Distilling in 2023 was mobbed so completely that it simply never left. Today her kitchen is one of the hardest tables in the city.
